Anjali made her digital debut in 2017 with the web series Untag in which she played the role of Shikha Suri.

In 2017, she made her TV debut with the show Dhhai Kilo Prem on Star Plus in which she played the role of Dipika Piyush Sharma. For the show, she was asked to put on more weight when she was already 108 kgs. She refused to do so and said,

I have lived a very active life all this while. Being someone who loves to trek and cycle to maintain a steady weight, gaining too much weight is a big no-no. I am at 108 kg for the role and any more change might get difficult to reverse.”

She appeared in the TV show Kullfi Kumarr Bajewala (2018) on Star Plus and Dil Bekaraar (2021) on Disney+ Hotstar.

In 2021, she appeared in the OTT film Suraj Aur Saanjh.

In 2023, she appeared as a contestant on the reality show Khatron Ke Khiladi 13 on Colors TV, hosted by Rohit Shetty on Colors TV.

She made her film debut in 2021 with Bellbottom in which she played the role of Anjali – Ashu’s wife.

• According to her, while the television industry was obsessed with slim and fit heroines, she didn’t want to lose any weight because she liked herself the way she was. In the interview, she further added,
  

  If I ever have to lose any weight, I’ll only go against what I have been saying for years; I am very comfortable in my own skin. I get messages from people who consider me their inspiration. I don’t want to disappoint them by going against what I have been striving to inculcate through my work and interaction with the audience. Even if I can inspire and make a difference to those few people, my work is done.”

  I laugh after reading the comments. I don’t pay attention to trolls. I keep reading such comments and laugh it off. I have taken many solo adventurous trips, but at the same time, I feel I am not answerable to anyone when I am already a part of the show.”
